Living in a world where society faces multiple challenges that are a global concerns and transcend national borders. One of the major concerns of countries is climate change, food security and public health crises, where demand comprehensive solutions that go beyond the capabilities of individual actors or institutions. Adopted following the Estates General of Food in 2018, the French EGalim law aims to guarantee farmers fairer remuneration, increase the value of virtuous agriculture, and provide access to healthy, safe, and sustainable food for all (Ministry of Agriculture and Food Sovereignty, 2019). Public school catering is now a major educational, social, environmental, and health issue (CNA, 2017). For years, it has faced higher standards and pressures on several levels (access, nutritional balance, quality, and sustainable products, protein diversification, food waste, plastic ban, pricing, health regulations, etc.), reinforced by the anti-waste law for a circular economy (AGEC) in 2021, which has five main axes: "Getting rid of disposable plastic; better-informing consumers; fighting waste and for solidarity; These binding laws will be implemented gradually from 2018 to 2025.
